OUR COFFEE 

Since becoming our house coffee 5 years ago, our Burbot blend has gained a bit of a cult following amongst the fine folk of Leicester. A Brazilian Icatu Yellow Bourbon + Ethiopian Yirgacheffe blend, unique to us, balancing lemon acidity with sweet spiced notes.

Arabica, Bourbon – Coffee Beans have different varieties within

the Robusta and Arabica families, similar to wine in the sense that with in

reds you have Cabernet Sauvignons and whites Chardonnay etc

PROCESS

Pulped Natural – Referring to the method of removing the bean

from the cherry. Pulped Natural is the process of removing the other skin

of the cherry while leaving the fruity mucilage intact during drying. This

process is also known as Honey as the pulp becomes sticky as it dries. This

adds sweetness to the bean, helping to round off and balance the acidity

and citrus notes.

PROCESS

Natural – The cherries are laid out to dry naturally until the

cherry turns from red to dark brown and the bean can be picked cleanly

from the hull.
